Ếch kho xì dầu (nước tương đen) là món ăn đơn giản với nguyên liệu thịt ếch tươi làm sẵn, cùng ít gia vị tẩm ướp đêm kho chín tới trong vòng tích tắc, thích hợp cho các chị em bận rộn.
Hành lá cắt nhỏ, để đầu hành lá 1 ít băm nhỏ, 1 ít cắt khúc. Hành tím băm nhỏ. Ớt hiểm đập dập rồi cho đùi ếch làm sạch vào ướp cùng hành lá, hành tím, ớt, 1/3 muỗng cà phê tiêu, 1/2 muỗng cà phê ớt bột, 1 muỗng cà phê hạt nêm trong khoảng 15 phút.
Chuẩn bị nước kho thịt ếch: khuấy đều hỗn hợp gồm 3 muỗng hắc xì dầu, 3 muỗng cà phê muỗng đường, 1 chén nước. Phi thơm hành tím với 1 muỗng canh dầu ăn, cho ếch vào xào săn.
Sau đó, cho ếch qua nồi, từ từ đổ hỗn hợp nước kho vào, đậy vung kín rồi kho lửa vừa đến khi nước sền sệt hoặc thấy thịt ếch mềm
